Green Grills opens at 59 Food Court on Saturday 7 November at 9:00 am. Crunchy salads, wraps and subs, with meat and fish grilled to order while you watch.

We could open sooner. But the greens need picking at dawn, the marinades need a full night, and every wrap gets rolled until it's right. So, fifteen days. Then the grill's on.

Fifteen days of prep

What's happening behind the container, day by day. Lines get crossed off as we go.

  1. 15 days to go Fri 23 Oct Container painted green. Then painted again.
  2. 12 days to go Mon 26 Oct Grill plates seasoned. Oil, heat, wipe, repeat.
  3. 10 days to go Wed 28 Oct Tasting run with our neighbours at 59 Food Court.
  4. 7 days to go Sat 31 Oct Menu boards go up. Prices get argued over.
  5. 5 days to go Mon 2 Nov Online ordering and meal plans switched on.
  6. 3 days to go Wed 4 Nov The team cooks the whole menu, start to finish, twice.
  7. 1 day to go Fri 6 Nov Greens arrive at 5 am. Chicken and fish go into the marinade.
  8. Opening day Sat 7 Nov Grill on. Doors open. First token printed.
